Get your bake on - with Katie Pix

Time to get floury-fingered with these delicious, speedy peanut-butter cookies.


As Bake Off grips the nation once again, we duck into the kitchen with the hilarious YouTube sensation and fuss-free foodie Katie Pix to make utterly delicious (almost healthy) peanut-butter cookies, which take under an hour to make and bake. Cuppa, anyone?

It’s no surprise that the larger-than-life chef and Jamie Oliver apprentice has a whopping 19k YouTube subscribers and counting. She’s real, funny and knocks up a whole host of delicious edibles faster than you can say ‘soggy bottom’. Which suits us perfectly.

We set her the task of teaching us a store-cupboard-style recipe that was (semi) healthy and absolutely yummy – one that wouldn’t have us kneeling in front of the oven, nose pressed to the glass, panic-stricken.

So, whether you’re looking for a little afternoon treat, the school is having a bake sale or you want something a little different to add to the kids' lunch boxes, here it is.

Katie didn’t let us down.

Peanut-butter oat cookies


Makes 24
Prep 15 minutes
Cook 15-18 minutes

150ml maple syrup
150g peanut butter
1 ripe banana, mashed
100g coconut oil, melted
1 large egg
1 tsp vanilla extract
1 tsp baking powder
1½ tsp cinnamon
1 tsp ground ginger
½ tsp salt
300g rolled oats
100g raisins



Mix together your wet ingredients – syrup, peanut butter, mashed banana, coconut oil, egg and vanilla – until well combined.


Add the baking powder, cinnamon, ginger, salt, oats and raisins. Fold until you’re left with a well-combined, sticky cookie dough.


Put tablespoons of the mixture on a lined baking tray.


Pop in an oven preheated to 200C/180C fan/gas 6 for 15 minutes or until beautifully golden. Transfer the cookies to a wire rack and leave to cool.
